I'd like to preface this by saying that a plethora of very well done tutorials all over the web, and if you haven't seen them, I'm sure they will do a MUCH better job of explaining than I ever could. However, I'm going to begin by linking to the JKH tutorials because you would be much better off reading & watching those. I don't often make a post simply to link to other resources, but I think this time it is warranted to do so as there is little to no reason not to view the better-made content.

I will, however, add some original content to this. I'll explain all my rookie mistakes so that YOU don't have to suffer them.
Setup:
Lets start by getting you set up. You can use either GTK Radiant, one of the most common-place mapping tools, or Net Radiant, which is what I use. For the purposes of this, I'll be quickly explaining how to set up Net Radiant (thanks to Art for putting up with me and teaching me all the things!).
First, you'll need to get it from here: github.com/Garux/netradiant-custom/releases
It comes in a zip file. You can unzip it in a location of your choice (for me, it was a folder on my desktop labeled "Net Radiant" that I extracted the zip to).
Next, you'll need the gamepacks for the game you're mapping with (JKA, JK2, or other games if you're looking for that) which are found here:

In the gamepacks zip file, drag-and-drop the ja.game folder (and any other game folders you want) to [netradiant-custom-win64\netradiant-custom-20200320] (If you use Linux or Win32, it'll be named appropriately to that. If you have an older or newer version of Net Radiant, the numbers "20200320" will differ as well, as that is the date [2020-03-20]). You must also go into the "games" folder in the gamepacks zip file and get the ja.game file (and any other file associated with the folders you chose) and place it in [netradiant-custom-win64\netradiant-custom-20200320\games].
Now, open up radiant using the radiant.exe located in [netradiant-custom-win64\netradiant-custom-20200320]. Select Jedi Academy, and continue. It will prompt you to set the file location. Here, you will path it to your gamedata folder. After that, hit okay and the radiant will launch.
In radiant, if you want to map for multiplayer, make sure you go to File -> Project Settings and switch it from Single Player Mapping to Multiplayer Mapping.
